Kasespatzle Recipe

  1. In a large pot (at least 4.5 qt) , fill 3/4 of the way and bring water to a boil.
  2. Lightly mix flour, eggs, aromat.
  3. Add nutmeg and just enough sparkling water.
  4. The consistency should be lumpy.

  8. Separate onion slices into rings.
  9. In hot butter, fry onion rings on slow heat.
  10. Pass spAtzle flour mix through spAtzle maker.

  13. dropping spAtzle in boiling water.
  14. Let simmer for 4 to 5 minutes.
  15. Remove with a sieve and place on a platter.
  16. Add some of the shredded cheese.
  17. Keep adding spAtzle and then more cheese on top until done.
  18. Then pour onions and remaining butter on spAtzle.
  19. Great with white wine or champagne.
