Kasespatzle Recipe
- 2 heaping serving spoons of Flour /per person
- 1 egg per person
- 1 Tblsp a" heaping of Aromat
- some Sparkling water
- dash of ground nutmeg
- 1 large onion, cut in 1/8" slices
- Butter
- Salted boiling water
- Shredded Apenzeller, Asiago, Gruyere Cheeses - a combination of two or three is good
- Equipment: SpAtzle Maker
- In a large pot (at least 4.5 qt) , fill 3/4 of the way and bring water to a boil.
- Lightly mix flour, eggs, aromat.
- Add nutmeg and just enough sparkling water.
- The consistency should be lumpy.

- Separate onion slices into rings.
- In hot butter, fry onion rings on slow heat.
- Pass spAtzle flour mix through spAtzle maker.

- dropping spAtzle in boiling water.
- Let simmer for 4 to 5 minutes.
- Remove with a sieve and place on a platter.
- Add some of the shredded cheese.
- Keep adding spAtzle and then more cheese on top until done.
- Then pour onions and remaining butter on spAtzle.
- Great with white wine or champagne.
