Pecan Cheesecake Bars Recipe
- 1 c. flour
- 1/3 c. butter, softened
- 1/2 c. dark brown sugar
- 1/2 c. pecans, shelled, minced
- To make crust and topping: Preheat oven to 350 degrees.
- Place flour, butter, brown sugar and pecans in a food processor or possibly blender and blend at low speed till crumbly.
- Reserve 1 c. of mix for topping.
- Pat remaining mix into bottom of an 8" ungreased square pan.
- Bake 8 min or possibly till set.
- Remove from oven and set aside.
- To make filling and assemble: In a large mixing bowl, place cream cheese and sugar and combine.
- Beat in egg.
- Add in lowfat milk, lemon juice and vanilla.
- Blend till smooth.
- Pour over crumb mix in pan.
- Top with reserved crumb mix.
- Bake for 25 min or possibly till golden.
- Remove from oven and cold.
- Chill and cut into bars before serving.
- Makes 12 (1/2") bars.
