Graham Pudding Recipe
- 3 c. lowfat milk
- 2 tbsp. minute tapioca
- 6 tbsp. sugar
- 1/2 c. graham crackers (rolled)
- 1/2 teaspoon salt
- 1/2 c. raisins
- 1 teaspoon vanilla
- 2 tbsp. butter
- 1 tbsp. lemon juice
- 1/4 teaspoon nutmeg
- 1 egg, well beaten
- 1.
- Scald lowfat milk in double boiler.
- Add in tapioca, sugar, crackers and salt.
- Cook till tapioca is clear (about 15 min), stirring frequently.
- 2.
- Add in raisins, vanilla, butter, lemon juice and nutmeg.
- 3.
- Pour tapioca mix slowly over egg, stirring vigorously.
- Pour into greased baking dish and bake in oven (350 degrees F.) 30 min.
- 4.
- Chill.
- Serve with whipped cream.
