Awesome Breakfast Casserole
- 1 1/2 pound hash brown potatoes frozen
- 1 pound bacon or sausage
- 3 large eggs
- 1 each onions chopped
- 2 ounces cheddar cheese shredded
- 10 1/2 ounces soup, cream of potato
- 1 x salt and black pepper to taste
- Cook the hash browns with the onion until crisp.
- Add the bacon or sausage and cook until just beginning to brown, drain off any excess fat (if any).
- Remove from heat, add the soup, cheese, beaten eggs and black pepper to taste.
- (No need to add salt as the soup, bacon or sausage will have more than enough seasoning)
- Transfer the mixture to a 13 by 9 inch baking dish, top with a bit of cheese if desired.
- Bake for 30 to 50 minutes in a 350F (180C) F oven.
- Allow to rest about 5 minutes before serving.
