Lemon Butter Bars (Gluten-Free Recipe)

  1. Heat oven to 350F.
  2. Combine all crust ingredients in bowl.
  3. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs.
  4. Press onto bottom of ungreased 8-inch square baking pan.
  5. Bake 15-20 minutes or until edges are lightly browned.
  6. Combine all filling ingredients except powdered sugar in bowl.
  7. Beat at low speed, scraping bowl often, until well mixed.
  8. Pour filling over hot, partially baked crust.
  9. Continue baking 18-20 minutes or until filling is set.
  10. Sprinkle with powdered sugar while still warm and again when cool.
  11. Cut into bars.
