Mixed Spices
- 2 tsp Cumin seeds
- 2 tsp Coriander
- 2 tsp Turmeric
- 1 1/3 tsp Red chili pepper
- 1/4 tsp Cardamon
- 1/4 tsp Cinnamon
- 1/4 tsp Allspice
- 1 tsp Garlic
- 1 tsp Ginger
- Measure out all of the spices and mix.
- Dry roast the spices in a frying-pan over low heat for about 5 minutes.
- *Keep stirring with a wooden spatula or shake the pan consistently.
- Transfer spices to a bowl or shallow container.
- I kept shaking the bowl to let the spices cool.
- Put the spices in a jar and store in a cool and dark place.
- Let the spices rest for a while to let the flavors and aromas settle in, and it's done.
