Crock Pot Vegetable Beef Barley Soup
- 34 cup chopped onion
- 34 cup cut green beans
- 23 cup uncooked barley
- 23 cup frozen corn, carrots & peas mix
- 1 12 cups water
- 1 teaspoon salt
- 12 teaspoon dried thyme leaves
- 14 teaspoon pepper
- 1 12 lbs beef stew meat, - 3/4-inch squares
- 12 cup bell pepper (small pepper)
- 12 cup white pearl onion (I use frozen )
- 23 cup diced potato
- 23 cup chopped cabbage
- 2 cans beef broth, - 14 1/2 ounces each
- 2 cans diced tomatoes with garlic, undrained - 14 1/2 ounces each
- 1 can tomato sauce, - 8 ounces
- Mix all ingredients in a 6 quart slow cooker.
- Cover and cook on low 8 to 9 hours or until vegetable and barley are tender.
