Mexitalian Sausage and Peppers

  1. To prepare ingredients:.
  2. Slice sausage links into 1/8 inch slices.
  3. Slice bell peppers into 1 inch slices, maybe 2 to 4 inches long.
  4. Peel and cut onions into eights.
  5. To cook:.
  6. Warm the oil in a large skillet over medium high heat.
  7. Saute the sausage just until it starts browning.
  8. Add onions and saute until onions start browning.
  9. Add the garlic, basil, thyme, salt, crushed red pepper, black pepper.
  10. Saute for a couple minutes, mixing constantly.
  11. Add the bell peppers and stir every minute until the peppers start to get soft.
  12. Turn the heat to high and add the Mexican tomato sauce.
  13. Stir constantly for about 3 minutes then turn heat off.
  14. The liquid should be boiled off and sauce thickened.
  15. We prefer this served over rice or pasta prepared with herbs.
