Fried Sweet Plantains

  1. Peel plantains.
  2. Cut off both ends then make three lengthwise slits in the skin.
  3. Peel off skin.
  4. Cut the plantains in half lengthwise.
  5. Heat 4 tbsp butter in a large skillet over medium low heat.
  6. Fry in a single layer until golden brown on bottom.
  7. Turn with spatula.
  8. Add cinnamon, vanilla and sugar.
  9. Let cook a few more seconds until golden brown on bottom checking often.
  10. Cook just long enough for sugar to caramelize.
  11. Just before serving melt remaining butter to finish the sauce.
  12. Serve immediately.
