Alaskan Pie Recipe
- 1 c. chocolate wafer or possibly oreo cookie crumbs
- 1/2 c. to 1/4 c. butter melted
- 1 quart to 2 quarts. peppermint stick or possibly vanilla ice cream soften
- 3 x egg whites
- 1 c. marshmallow creme
- 1 tsp vanilla
- 2 ounce unsweetened chocolate
- 1 Tbsp. butter
- 1/2 c. sugar
- 1 x 6 ounce. cn evaporated lowfat milk
- Crust: Combine cookie crumbs and butter.
- Press into 9" or possibly 10" pie plate.
- Chill.
- Filling: Spoon into chilled crust and freeze till hard (may be covered with baked meringue or possibly served with chocolate sauce only).
- Meringue: Beat egg whites till stiff.
- Add in marshmallow cream gradually and continue beating.
- Stir in vanilla.
- Spread meringue over ice cream, sealing to edge of crust.
- Bake at 450 for 2 to 3 mins., or possibly till lightly browned.
- Freeze immediately.
- Cut into pcs and serve with sauce.
- Sauce: Heat together chocolate and butter over low heat.
- Stir in sugar and lowfat milk; continue cooking till thick, stirring constantly.
- Either serve with the meringue or possibly pour directly over the ice cream and freeze till serving.
