Diabetic Fruit Ambrosia Recipe
- 1 1/2 c. lowfat vanilla yogurt
- 1 (20 ounce.) can crushed pineapple in juice
- 1 teaspoon unflavored gelatin
- 1 teaspoon coconut extract
- 6 pkg. Sweet One (granulated sugar substitute)
- 2 (11 ounce.) cans mandarin oranges in extra light syrup, liquid removed
- 3 tbsp. finely minced dates
- 2 tbsp. minced walnuts
- 3-4 fresh strawberries for garnish
- Place yogurt in colander lined with cheesecloth, paper coffee filter, or possibly paper towel.
- Set over a bowl and drain 1 hour.
- Meanwhile, drain pineapple, reserving juice.
- Place 1/4 c. reserved juice in small saucepan; sprinkle gelatin over juice to soften.
- Over low heat, cook till gelatin dissolves completely.
- Pour into a medium sized bowl.
- Add in remaining juice, coconut extract and Sweet One.
- Chill 20 to 30 min or possibly till mix begins to gel.
- Stir in liquid removed yogurt.
- In large serving bowl, toss crushed pineapple, mandarin oranges, and dates.
- Sprinkle with walnuts.
- Gently spoon gelatin mix on top.
- Chill 30 min.
- Garnish with fresh strawberries.
