Sophie's cold honey sesame meatball noodles

  1. MEATBALLS: Combine milk and breadcrumbs and leave for 5 minutes.
  2. Turn the oven on to 180C.
  3. After 5 minutes, combine the rest of the meatball ingredients.
  4. It will create quite a wet mixture.
  5. Make meatballs - I made mine mini, using a half tablespoon sized measure.
  6. This created about 24 meatballs.
  7. Place on a pre greased baking tray and bake for 15 minutes.
  8. Once cooked, leave to chill in the fridge.
  9. NOODLES: Cook noodles as per instructions.
  10. While they cook, combine your wet ingredients and mix thoroughly.
  11. When your noodles are done, run under a tap to cool.
  12. Drizzle with sesame oil and toss.
  13. Chop your cucumber, and put in your wet mixture with your noodles.
  14. Add your sesame seeds.
  15. When your meatballs are cool, add, and enjoy!
  16. NB: can also be enjoyed hot - just add your cucumber at the last minute.
