Ann's Crockpot Chicken Stew Recipe

  1. 1 Can tomatoes (I like the diced and get various flavors; this time I used onions, green peppers & celery.)
  2. 1 10-ozcan tomatoes with green chiles (such as Ro-tel)
  3. 1 envelope onion soup mix1 4-ounce can mushrooms (liquid removed)
  4. 1 very small (2-3 ounce) can sliced black olives (liquid removed)
  5. 1 can Campbell's cream of chicken soup (I have found name-brand canned soups superior)
  6. I always spray my crockpot before using with a Pam-like product.
  7. Makesclean-up so much easier.
  8. Combine all ingredients in crockpot, cook 4-5 hours on high or possibly 8-10 on low.
  9. There is sufficient salt & other flavorings in the soups which I do not use any more.
  10. My crockpot is several years old & only holds about 5 quarts or possibly so.
  11. I really need a larger one!
  12. As I was putting these ingredients in & the cooker had already started, I discovered there wasn't sufficient room for everything.
  13. So I started spooning off the liquid into another bowl.
  14. This could've been added back in later if needed.
  15. I like my stew a little thick, so didn't add in any liquid back in.
  16. It's in the freezer now waiting for the next stew.
  17. I thought later if I didn't use the can of chicken broth, I might have had sufficient space.

  19. PS: When I liquid removed off the cans of corn, green beans, etc., I saved the liquid & used it to cook rice instead of plain water.
  20. I have sometimes found frzn boneless skinless chicken THIGHS(!)
  21. at Wal-Mart.
  22. They make life so much easier!
  23. I try to stock up when I find them, as they dont always have them.
