Ann's Crockpot Chicken Stew Recipe
- Cooking spray (such as Pam, optional)
- 5 x frzn chicken thighs (boneless & skinless if possible)
- 1 can chicken broth
- 1 can corn (liquid removed)
- 1 can Italian cut green beans (liquid removed)
- 1 can pinto beans (undrained)
- 1 can black beans (undrained)
- 1 can Great Northern beans (undrained)
- 1 Can tomatoes (I like the diced and get various flavors; this time I used onions, green peppers & celery.)
- 1 10-ozcan tomatoes with green chiles (such as Ro-tel)
- 1 envelope onion soup mix1 4-ounce can mushrooms (liquid removed)
- 1 very small (2-3 ounce) can sliced black olives (liquid removed)
- 1 can Campbell's cream of chicken soup (I have found name-brand canned soups superior)
- I always spray my crockpot before using with a Pam-like product.
- Makesclean-up so much easier.
- Combine all ingredients in crockpot, cook 4-5 hours on high or possibly 8-10 on low.
- There is sufficient salt & other flavorings in the soups which I do not use any more.
- My crockpot is several years old & only holds about 5 quarts or possibly so.
- I really need a larger one!
- As I was putting these ingredients in & the cooker had already started, I discovered there wasn't sufficient room for everything.
- So I started spooning off the liquid into another bowl.
- This could've been added back in later if needed.
- I like my stew a little thick, so didn't add in any liquid back in.
- It's in the freezer now waiting for the next stew.
- I thought later if I didn't use the can of chicken broth, I might have had sufficient space.
- (My recipes are always "works in progress")
- PS: When I liquid removed off the cans of corn, green beans, etc., I saved the liquid & used it to cook rice instead of plain water.
- I have sometimes found frzn boneless skinless chicken THIGHS(!)
- at Wal-Mart.
- They make life so much easier!
- I try to stock up when I find them, as they dont always have them.
