Florida Tomato Basil Linguini

  1. Wash and rinse tomatoes.
  2. Dry tomatoes, then core and cut in half.
  3. Use a spoon to remove most of the seeds.
  4. Chop tomatoes coarsely.
  5. Add chopped tomatoes to a colander, sprinkle with a few pinches of salt, and let them sit so they can release some of their water.
  6. This should only take a half an hour and can be done ahead of time.
  7. Combine drained tomatoes, olive oil, lemon juice, lemon zest and garlic into a large saute pan.
  8. Heat tomato mixture over low heat and warm the mixture do not cook it.
  9. Cook and drain pasta according to its directions.
  10. Combine pasta and tomato mixture together.
  11. Add fresh basil and parmesan.
  12. Taste for seasoning and adjust salt and fresh ground pepper.
