Simmered Tuna Offcuts

  1. This is the whole piece of scrap tuna.
  2. It has a lot of meat on the bones.
  3. Since it has blood and muscle fibers in the meat, it's not suitable to eat raw.
  4. You could also use a slightly aged sashimi grade block of tuna or albacore tuna.
  5. Cut it into 2cm cubes.
  6. Parboil the tuna quickly in water.
  7. Drain in a colander and then gently wash.
  8. Next, combine the tuna, sliced onions, and the ingredients in a pot and cook.
  9. Bring to a boil over low heat.
  10. Skim off any scum.
  11. Cover with a lid and simmer until the liquid boils down.
  12. Once it looks like this, add the seasoning ingredients!
  13. Transfer it to a bowl....
  14. Top with green onions and white roasted sesame seeds!
