Simmered Tuna Offcuts
- 200 grams Fresh sashimi grade tuna
- 1 Onion
- 2 tbsp Mentsuyu (3x concentrate)
- 2 tbsp Soy sauce
- 3 tbsp Sugar
- 2 tbsp Sake
- 1 tbsp Mirin
- 1 Green onions or scallions
- This is the whole piece of scrap tuna.
- It has a lot of meat on the bones.
- Since it has blood and muscle fibers in the meat, it's not suitable to eat raw.
- You could also use a slightly aged sashimi grade block of tuna or albacore tuna.
- Cut it into 2cm cubes.
- Parboil the tuna quickly in water.
- Drain in a colander and then gently wash.
- Next, combine the tuna, sliced onions, and the ingredients in a pot and cook.
- Bring to a boil over low heat.
- Skim off any scum.
- Cover with a lid and simmer until the liquid boils down.
- Once it looks like this, add the seasoning ingredients!
- Transfer it to a bowl....
- Top with green onions and white roasted sesame seeds!
