Fruit-Glazed Cheesecake-Part 2

  1. STRAWBERRY GLAZE Mash strawberries.
  2. Combine strawberries, sugar and cornstarch in a heavy saucepan; stir well.
  3. Cook over medium heat until thick, stirring constantly.
  4. Stir in NOTE: If desired, Blueberry Glaze may be substituted for the whole strawberries and Strawberry Glaze.
  5. BLUEBERRY GLAZE Combine blueberries and 1/4 cup water in a heavy saucepan; cook over medium heat, stirring constantly, 15 minutes or until berries are very soft.
  6. Press through a sieve, and return to saucepan.
  7. Stir in sugar and kirsch; cook over medium heat 10 minutes, stirring often, or until slightly thickened.
  8. Dissolve cornstarch in 3 tablespoons water; add to blueberry mixture.
  9. Cook, stirring constantly -----
