Hot and Filling Vegetarian Pasta Sauce
- 3 cups stewed tomatoes, canned (or 6 large, fresh tomatoes)
- 1 onion, diced
- 3 garlic cloves, diced
- 1 leek, julienned
- 12 ounces silken tofu
- 1 green pepper
- fresh basil
- rosemary
- Add the tomatoes to a medium saucepan.
- begin to heat on low, stirring regularly.
- In another pan, saute the garlic and onion until the onion is transparent.
- The tofu may be added in one of two ways.
- If you want a more substantive sauce, cut it into 1/2 inch cubes and add it to the tomato.
- If you are less loving of tofu in "the raw", blend the silken tofu in a blender until it is a liquid.
- Mix with the tomato.
- This will give a creamier sauce, better for kids and adults unaccepting of tofu.
- Add the remaining spices (and I recommend adding some of your own!)
- and simmer until needed.
- Makes six servings.
