Z.O.T.Ch.(Zucchini, Onions, Tomatoes And Cheese)

  1. Melt margarine in frying pan.
  2. Saute zucchini and onions, a little at a time, until transparent or just beginning to brown. Transfer to ovenproof casserole dish.
  3. Season with salt, pepper and basil as you saute.
  4. When all zucchini is cooked, add tomato to zucchini.
  5. Cover and cook at 325u0b0 for 45 minutes or microwave for 10 to 12 minutes.
  6. Remove from oven.
  7. Drain liquid with turkey baster. (Save it to add to vegetable soup!)
  8. Top with cheese. Return to oven for 5 minutes (no cover), or microwave for 5 minutes, covered.
