Z.O.T.Ch.(Zucchini, Onions, Tomatoes And Cheese)
- 6 small or 2 to 3 medium fresh zucchini, peeled and sliced
- 1 medium fresh onion, sliced
- 1 to 2 fresh tomatoes, coarsely chopped
- 12 to 16 oz. Cheddar cheese, grated
- 1/2 stick margarine
- salt and pepper
- basil
- Melt margarine in frying pan.
- Saute zucchini and onions, a little at a time, until transparent or just beginning to brown. Transfer to ovenproof casserole dish.
- Season with salt, pepper and basil as you saute.
- When all zucchini is cooked, add tomato to zucchini.
- Cover and cook at 325u0b0 for 45 minutes or microwave for 10 to 12 minutes.
- Remove from oven.
- Drain liquid with turkey baster. (Save it to add to vegetable soup!)
- Top with cheese. Return to oven for 5 minutes (no cover), or microwave for 5 minutes, covered.
