Strawberry Oat Cupcakes

• 2 cups oats
• 1/3 cup brown sugar
• 1 1/2 tsp baking powder
• 1/4 tsp salt
• 1 egg white
• 1 egg
• 3/4 cup skim milk
• 2/3 cup mashed ripe banana
• 1/2 tsp vanilla extract
• 1 1/2 cup diced fresh strawberries

1. Preheat the oven to 180C.
2. mist 12 cups in a muffin tin with cooking spray.
3. Combine the dry ingredients in a large bowl and stir until thoroughly mixed.
4. In a separate bowl, whisk together the remaining ingredients except the strawberries.
5. Add to the dry ingredients and stir until blended together.
6. Stir in the strawberries.
7. Distribute the oatmeal mixture between the prepared muffin cups.
8. Bake uncovered for 20 minutes or until oatmeal is lightly browned.
