George's Brown Rice Pudding
- 2 cups skim milk
- 2 12 cups cooked brown rice
- 3 large eggs (beaten)
- 34 cup turbinado sugar
- 34 teaspoon vanilla extract
- 34 teaspoon ground nutmeg
- Preheat oven to 375F.
- Combine all ingredients in a large bowl and mix well.
- Grease 1.5-quart glass dish (olive oil works well).
- Pour mixture into dish and bake for 65-70 minutes.
- Since the rice falls to the bottom, stir at about 50 minutes in and at about 60 minutes.
