Cornbread

  1. Preheat oven to 350.
  2. Chop jalapenos and add to melted butter.
  3. Add to sugar and set aside.
  4. In another bowl, mix flour, polenta, salt and baking soda together.
  5. In another bowl, whisk eggs lightly.
  6. Combine buttermilk and baking soda together and whisk until baking soda starts to bubble up.
  7. Quickly add to eggs and mix well.
  8. Add egg mixture to sugar mixture and then add all to flour mixture.
  9. Mix well and pour into a well greased pan and bake for 30-35 minutes.
