Cornbread
- 4 cup flour
- 4 cup sugar
- 4 cup buttermilk
- 2 1/4 cup butter, melted
- 8 each eggs
- 3 each jalapenos
- 1 1/2 tsp salt
- 1 1/2 tsp baking soda
- 4 cup polenta
- Preheat oven to 350.
- Chop jalapenos and add to melted butter.
- Add to sugar and set aside.
- In another bowl, mix flour, polenta, salt and baking soda together.
- In another bowl, whisk eggs lightly.
- Combine buttermilk and baking soda together and whisk until baking soda starts to bubble up.
- Quickly add to eggs and mix well.
- Add egg mixture to sugar mixture and then add all to flour mixture.
- Mix well and pour into a well greased pan and bake for 30-35 minutes.
