Roasted Tomatillo Salsa

  1. Preheat oven to 375F.
  2. Toss first 5 ingredients in 8x8x2-inch glass baking dish.
  3. Roast in oven until tomatillos and onion are very soft, about 1 hour.
  4. Transfer contents of baking dish to processor and add cilantro.
  5. Puree until almost smooth.
  6. Transfer salsa to bowl.
  7. Chill or serve at room temperature.
