Mama Rita's Enchiladas
- 1 lb ground beef
- 2 teaspoons chili powder
- 12 onion, chopped
- 8 ounces salsa
- 16 ounces tomato sauce
- 16 ounces monterey jack cheese, shredded
- 16 ounces refried beans
- 12 tortillas
- Brown Beef with Onion in frying pan.
- Drain off fat.
- Add Chili Powder, mix well.
- Mix Salsa and Tomato Sauce well in small pot, heat thoroughly.
- Assemble Enchiladas with 1 heaping tablespoon Refried Beans and 2 tablespoons of meat mixture.
- Roll each Enchilada and place in baking pan with seam side down.
- After all are filled spread salsa mix on top.
- Top with Cheese.
- Bake in preheated oven at 350 degrees for 20 minutes or until hot.
