Melting moments
- 180 grams butter
- 1/3 cup icing sugar
- 1 tsp vanilla essence
- 1/3 cup cornflour
- 1 cup flour
- 60 grams butter
- 1/2 cup icing sugar
- 2 tsp passion fruit essence
- Preheat the oven to 180 C. Prepare a baking tray with baking paper and set aside.
- In a bowl, using electric beaters, beat the softened butter with icing sugar and vanilla essence until smooth and creamy.
- Sift the cornflour and flour into the mixture and combine into a dough.
- Take a spoonful of the mixture about 3 or 4 centimeters wide and roll into a ball in your hand.
- Place on the baking tray and press down with a fork so it flattens to about 1.5 cm thick.
- Once your tray is full, bake in the oven for 15 minutes.
- Cool the cookies completely on a wire rack before filling them.
- For the filling : in a bowl, beat the butter and icing sugar.
- Add the passion fruit and combine.
- Taste the filling and add more passion fruit if you like.
- Spoon a teaspoon of filling onto a biscuit and sandwich onto another biscuit.
- Enjoy with coffee or tea!
- Store in an air tight container.
