Barb's Favorite Cheesecake Recipe
- 1 c. graham cracker crumbs
- 3 tbsp. sugar
- 3 tbsp. butter, melted
- 3 (8 ounce.) Packages cream cheese
- 3/4 c. sugar
- 1 tbsp. lemon juice
- 1 teaspoon grated lemon rind
- 3 Large eggs
- 1 c. dairy lowfat sour cream
- 2 tbsp. sugar
- 1 teaspoon vanilla
- Strawberry halves
- Combine crumbs, sugar and butter.
- Press onto bottom of 9" springform pan.
- Bake at 325 degrees for 10 min.
- Reduce oven temperature to 300 degrees.
- Combine softened cream cheese, sugar, juice and rind, mixing till well blended.
- Add in Large eggs, one at a time, mixing well after each addition.
- Pour mix over crust.
- Bake at 300 degrees for 55 min.
- Combine lowfat sour cream, sugar and vanilla.
- Carefully spread over cheesecake.
- Continue baking 10 min.
- Loosen cake from rim of pan.
- Cold before removing rim of pan.
- Garnish with strawberry halves.
- Chill.
