Broccoli Cornbread
- Cooking spray
- 2 (8 1/2-ounce) boxes Jiffy cornbread mix
- 1 1/2 cups cottage cheese
- 1 (10-ounce) box frozen broccoli cuts, thawed and well drained
- 3/4 cup (1 1/2 sticks) unsalted butter, melted
- 3 large eggs
- 1/4 teaspoon salt
- Preheat the oven to 350F.
- Lightly coat a 9 x 13-inch casserole dish with cooking spray.
- Combine the cornbread mix, cottage cheese, broccoli, butter, eggs, and salt in a large bowl.
- Pour into the prepared casserole dish and bake for 30 minutes or until the center is firm and the top is golden brown.
- Vegetarian friendly!
