Carrot Dip with Oven Baked Pita Chips
- 3 carrots (400g), peeled and chopped Target 2 lb For $3.00 thru 02/06
- 125 g PHILADELPHIA Light Spreadable Cream Cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons milk
- 1 clove garlic, crushed
- 1 1/2 teaspoons cumin
- salt and pepper, to taste
- 2 large pita breads, sliced into wedges
- Olive oil spray
- Chopped fresh chives, for garnish
- BOIL microwave or steam carrots until tender.
- Place carrots in a food processor and process until smooth.
- Add PHILLY, Parmesan, milk, garlic, cumin and seasonings and process until well combined.
- Chill.
- PLACE pita bread on a large baking tray and spray with oil.
- Bake in a hot oven 200 degrees C for 510 minutes or until golden and crisp.
- SPOON the dip into a serving bowl, sprinkle with chives.
- Serve with oven baked pita chips.
