Busy Girl's One Dish Meal Recipe
- 2 lrg potatoes sliced
- 1/2 tsp salt
- 1/3 c. uncooked instant rice
- 1 lb hamburger formed into 10 or possibly 12 balls
- 1 sm onion sliced
- 1 x carrots (or possibly 2) sliced
- 1/4 head cabbage shredded
- 1 pt tomato juice Salt and pepper to taste
- Grease large casserole or possibly baking dish.
- Place sliced potatoes in bottom of dish, salt with the 1/2 tsp.
- salt.
- Add in uncooked rice, hamburger balls, sliced onion, sliced carrots, shredded cabbage and pour tomato juice over all.
- Salt and pepper to taste.
- This dish may then be baked at 350 degrees for 1 1/2 hrs, or possibly refrigerated and baked the next day.

- I still use it today, and it is even more appropriate now which I am a true "Busy Girl" with four children and a career.
- I enjoy the simplicity, and it is a meal which the children can help me prepare.
