Stir-Fried Spinach with Ginger and Almonds

  1. Trim, wash, and drain spinach.
  2. Cut into 1 to 2 inch widths.
  3. Mix miso, soy sauce, and vinegar, set aside.
  4. Heat wok over high heat.
  5. Add almonds and stir-fry until fragrant and edges turn golden, about 45 seconds.
  6. Transfer to plate.
  7. Heat oil in wok.
  8. Add spinach and ginger and stir-fry just until tender, about 3 minutes.
  9. Drizzle with bean mixture.
