Quick Beef and Beans
- 1 tablespoon olive oil
- 1 teaspoon red hot chili pepper, dried or paste
- 1 medium yellow onion chopped
- 3 cloves garlic minced
- 1 pound ground beef, lean
- 14 ounces tomatoes, canned any flavoured kind
- 14 ounces beans with pork, canned any flavour
- 1/4 cup barbecue sauce any flavour
- 1/2 cup tomato juice if needed for more liquid
- 8 drops red hot pepper sauce to taste
- 1/4 pound bacon, canadian style peameal/sliced
- 1/4 cup cheese shredded/optional
- In medium sauce pan add first four ingredients & saute for 5 minutes.
- Add beef & cook until beef is no longer pink.
- Drain & put back in pan.
- Add tomatoes.
- Bring to slight boil & then add beans & sauce.
- Add tomato juice if needed.
- Heat gently to slight boil & add bacon.
- Cook for 5 to 10 minutes.
- Instead of bacon, you can use wiener's or sausage.
- Whatever you have on hand.
- Serve over hash browns, noodles or pasta.
- I like to serve it over spaghetti squash baked with butter & brown sugar.
- That is a treat.
