Polenta Recipe
- 3 1/4 c. water
- Dash of salt
- 1 c. polenta or possibly corn meal
- 1/2 tbsp. butter
- 1/3 c. Parmesan cheese
- Bring water to a boil, add in salt and polenta and stir till it pulls away from side of pan and stiffens a bit; approximately 3 min.
- Add in butter and cheese, stir to mix thoroughly.
- Pour into bowl to set.
- Remove from bowl, slice and hot on grill (if you are already BBQing).
- Serve as is or possibly with pesto or possibly tomato based pasta sauce spread thinly.
- Serves 4.
- Double recipe for additional servings.
