Mushrooms Vittoria
- 2 tablespoons butter
- 2 tablespoons olive oil
- 6 garlic cloves, large, flattened
- 1 14 lbs mushrooms, halved, quartered if very large
- 1 cup dry white wine
- salt
- pepper
- fresh Italian parsley, shopped
- Melt the butter and the oil in a heavy large skillet over medium-high heat.
- Add garlic and saute until beginning to brown, about 2 minutes.
- Using a slotted spoon remove and discard garlic.
- Add mushrooms and saute until golden brown and the juices evaporate, about 15 minutes.
- Add wine and simmer until reduced to glaze on mushrooms, stirring occasionally, about 10 minutes,.
- Season mushrooms with salt and pepper; add parsley and serve.
