Fennel and Cheese Salad

  1. Remove the hard inner core from the fennel bulbs.
  2. Cut bulbs into thin slices.
  3. Chop the shallot into very fine pieces.
  4. Make a dressing with the yoghurt, mustard, (optional) lemon juice, a pinch of salt and pepper and a few finely chopped fennel leaves.
  5. Mix fennel, shallots, cheese cubes and dressing.
  6. Ready to eat!
