Ham and Sweet Potatoes

  1. Cook, then mash potatoes.
  2. Add 1 tablespoon butter, salt, pepper, nutmeg, and enough milk to whip.
  3. Heat oven to 375f.
  4. In a skillet saute the ham in 2 tablespoons butter stirring until golden.
  5. Add green pepper (or pimento) and pineapple chunks.
  6. Cook 2 or 3 minutes.
  7. Stir in combined brown sugar, cornstarch, juice, and vinegar.
  8. Cook, stirring until thickened and clear.
  9. Pour mixture into 9 inch pie plate or casserole dish.
  10. Drop spoonfuls of potato on top.
  11. Bake until hot in 375F oven about 20-25 minutes.
