Pickled Beets Recipe

  1. Put first 4 ingredients in a large saucepan and boil for at least 2 min.
  2. Strain to remove pickling spice.
  3. Put sliced beets in saucepan with pickling juice and boil 2 min.
  4. Fill sterilized canning jars 1/2 - 1 inch from rim and cover with sterilized lids and rims.
  5. Tighten rims.
  6. Cold away from draft and cover jars with towel.
  7. Makes 4 pint jars or possibly 2 qts.
