Honey Lemon Rhubarb Pie Recipe

  1. Combine rhubarb, sugar, flour, salt and lemon rind; mix well.
  2. Blend in honey and food color and let stand while making crust.
  3. Line the 9" pie pan and fill with rhubarb mix, dot with butter, put on top crust and seal edges well.
  4. Brush top with lowfat milk and sprinkle with sugar.
  5. Bake in warm oven, 450 degrees for 10 min.
  6. Reduce heat to 350 degrees and bake 35 to 45 min.
  7. NOTE: You may add in 1 tsp.
  8. cinnamon and 1/2 tsp.
  9. nutmeg to the rhubarb sugar mix, if desired, before baking.
