Honey Lemon Rhubarb Pie Recipe
- 4 c. rhubarb, cut up
- 1 1/4 c. sugar
- 6 tbsp. flour
- 1/4 teaspoon salt
- 2 teaspoon lemon rind, grated
- 1/3 c. honey
- 4-5 drops red food coloring
- 2 tbsp. butter
- Pastry for 2 crust pie
- Combine rhubarb, sugar, flour, salt and lemon rind; mix well.
- Blend in honey and food color and let stand while making crust.
- Line the 9" pie pan and fill with rhubarb mix, dot with butter, put on top crust and seal edges well.
- Brush top with lowfat milk and sprinkle with sugar.
- Bake in warm oven, 450 degrees for 10 min.
- Reduce heat to 350 degrees and bake 35 to 45 min.
- NOTE: You may add in 1 tsp.
- cinnamon and 1/2 tsp.
- nutmeg to the rhubarb sugar mix, if desired, before baking.
