Fettuccine Florentine
- 2 (9 ounce) packages fresh fettuccine
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 lb fresh spinach, shredded
- 1 cup heavy cream
- 1 12 cups grated parmesan cheese
- 14 teaspoon pepper
- In a large pot of boiling salted water, cook pasta until tender.
- Drain.
- In a large skillet melt butter with olive oil over medium heat.
- Add garlic and cook until soft, 2-3 minutes.
- Stir in spinach and cook, tossing, for 1 minute.
- Add pasta and cream to spinach and raise heat to medium high.
- Cook just until cream slightly thickens, about 3 minutes.
- Add cheese and pepper.
- Toss to coat.
