Fettuccine Florentine

  1. In a large pot of boiling salted water, cook pasta until tender.
  2. Drain.
  3. In a large skillet melt butter with olive oil over medium heat.
  4. Add garlic and cook until soft, 2-3 minutes.
  5. Stir in spinach and cook, tossing, for 1 minute.
  6. Add pasta and cream to spinach and raise heat to medium high.
  7. Cook just until cream slightly thickens, about 3 minutes.
  8. Add cheese and pepper.
  9. Toss to coat.
