Buttermilk Pecan Pancakes Recipe

  1. In a bowl, beat the egg yolks and butter.
  2. Combine flour, pecans, sugar, baking pwdr, baking soda and salt; add in to the egg mix alternately with buttermilk.
  3. Beat egg whites till stiff peaks form; fold into batter.
  4. Pour batter by 1/4 cupfuls onto a lightly greased warm griddle; turn when bubbles form on top of pancakes.
  5. Cook till second side is golden.
  6. Makes 16 pancakes
