Best Ramen Soup from Scratch
- 1 bell pepper
- 5 eggs
- 3 1/2 cup all-purpose flour
- 2 dash szechuan peppercorn
- 1 red onion
- 1 liter vegetable stock
- 1 clove ginger
- 1 pinch crushed red pepper
- tsp salt
- 1 tbsp vegetable oil
- Pour flour into bowl.
- Make a well and add eggs to middle.
- Beat eggs and slowly incorporate to form dough, adding water if too dry.
- Let dough rest for 15-20 min
- Add broth to a large pot on stove.
- Grate ginger and add.
- Add soy sauce and salt to taste.
- Pour in 1 tablespoon vegetable oil.
- Roll out dough and cut into strips.
- Bring broth to a boil and sprinkle in cut noodles.
- Cook for 4-5 minutes.
- Take remaining egg and poach it in the broth for 3-4 minutes (optional)
- Chop onions and pepper and add.
- Add crushed red pepper.
- Serve immediately and enjoy!
