Okie Beef Stir Fry

  1. Get your beef all chopped up and pretty.
  2. Then accessorize it with some salt and pepper.
  3. Beef is good and clean, I tell you.
  4. Now were gonna get tricky.
  5. We dont want to cook this beef.
  6. We just want to sear it.
  7. So, get your pan screaming hot and add a tablespoon of vegetable oil.
  8. I like the smoke point of veggie oil plus it doesnt smell weird when you fry in it.
  9. Okay, onto the beef.
  10. Sear it until its no longer gray.
  11. Then turn it and do it again.
  12. Then take it off to rest on a pretty plate.
  13. Its time to get your chop on.
  14. Slice and half those bell peppers.
  15. Slice those onions into about 1/2 inch slices.
  16. Slice quick with a sharp knife and you wont cry.
  17. I promise.
  18. *sniff, sniff*
  19. Add those to a big, heavy-bottomed pot on medium high heat with your other tablespoon of vegetable oil.
  20. Do you wanna know why I like vegetable oil?
  21. Oh, I already told you.

  23. I wont tell if you add some salt and pepper right here.
  24. In fact, I encourage you to do so.
  25. Slice and halve your squash.
  26. Then do the same thing with the zucchini.
  27. You have to because zucchini gets jealous.
  28. Now add all ingredients from the squash and zucchini to the hot tub of peppers and onions.
  29. You can also throw in the mushrooms, too.
  30. Its all good, no worries.
  31. Dont forget to salt and pepper again.
  32. Layers are good.
  33. Kind of like donkeys.
  34. Let your veggie medley cook on screaming hot heat (with you stirring occasionally) for about 15 minutes.
  35. Turn the heat down to medium low now.
  36. The beef may rest no longer.
  37. Its time to add it to the yummies of veggies.
  38. Toss it in right on top cause its pretty and good.
  39. Then add in your sauce ingredients (water, soy sauce, and sweet n sour sauce) so your meat and veggies can call themselves stir-fry.
  40. And because its just that good man!
  41. Sometimes I always add in crushed red pepper flakes right here ... because Im a crazy girl.
  42. Thats why.
  43. After this, cover the pot and let it rock and roll to the soft rock for about an hour.
  44. When you come back, your Okie goodness should be looking and smelling irresistible.
  45. Oh yeah, baby.
  46. Id get me a spoon and do a salt check right about now.
  47. Ladle your pot of yummy on top of some white rice.
