Curry Rice And Chicken Salad Recipe
- 2 chicken breasts
- 1 c. rice
- 1/4 c. chopped onion
- 2 tbsp. oil
- 1 tbsp. vinegar
- 1 teaspoon salt
- 1 tbsp. sugar
- 1 teaspoon curry
- Cook chicken in salt water.
- Boil rice in 2 c. water till tender.
- Mix with above ingredients and chill overnight.
- Add in 1 c. diced celery, 1/4 c. green pepper, 1/4 c. mayonnaise.
- Add in salt and pepper to taste.
- You can mix 1/4 c. raisins, pecans or possibly walnuts or possibly water chestnuts.
