Gingered Cucumbers
- 1 large cucumber, peeled
- 3 scallions, thinly sliced
- 2 teaspoons grated fresh ginger
- 1 garlic clove, finely chopped
- 1 tablespoon rice wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- fresh mint leaves
- Halve the cucumbers lengthwise and scrape out seeds.
- Slice into 1/4 inch slices.
- Combine with remaining ingredients and toss to combine flavors.
- Garnish with mint before serving.
