  1. Turkey Carcass Gumbo (Very Good)Save Your Bones Place carcass in large soup kettle; cover with water.
  2. Bring to a boil; cook over low heat 1 1/2 hours.
  3. Drain turkey; reserve broth.
  4. Remove meat from carcass; chop and set aside.
  5. Heat drippings in kettle; add flour
  6. Add broth and other seasonings; simmer 1 hour.
  7. Add turkey and sausage; cook 15 minutes.
  8. Add rest of ingredients; cook 10 minutes longer.
  9. Serve over hot cooked rice.
  10. Yields 10 to 12 servings
