Apple Ricotta Brunch Biscuits

  1. Heat oven to 375.
  2. Spray 8 jumbo muffin tins or 8 (6 oz) custard cups with nonstick cooking spray.
  3. In small bowl, combine sugar, cheese& egg.
  4. Beat at HIGH speed for 1 minute.
  5. In small bowl, combine cinnamon& almonds.
  6. Mix well.
  7. Separate dough into 8 biscuits.
  8. Press each biscuit evenly in bottom& up sides of prepared muffin tins.
  9. Place 1 wedge of apple in each cup.
  10. Spoon 2 rounded tablespoonfuls of cheese mixture over each apple wedge.
  11. Sprinkle with cinnamon mixture.
  12. Bake at 375 for 20 to 25 minutes or until biscuits are deep golden brown& apples are crisp-tender.
  13. Remove biscuits from tins.
  14. Cool on wire racks for 15 minutes.
  15. Serve warm.
  16. Store any leftovers in refrigerator.
  17. Makes 8 biscuits.
