Mexican Cornbread Casserole Recipe
- 1 pkg. cornbread mix
- 2 Large eggs
- 2/3 c. lowfat milk
- 1 can cream style corn
- 1 sm. onion, minced
- Minced green chilies
- 1 pound grnd beef
- 4 slices American cheese
- Combine 2 Large eggs and 2/3 c. lowfat milk with package of cornbread mix.
- Add in 2/3 can of cream style corn.
- Brown grnd beef, add in onions and green chilies.
- Pour 1/2 of cornbread mix into a lightly greased casserole.
- Put grnd beef mix on top.
- Pour remaining corn on top and add in 4 slices cheese on top.
- Cover with cornbread mix.
- Bake at 375 to 400 degrees for 45 min to 1 hour.
