Oven-Roasted BBQ Chicken Quarters

• 48 each Broiler-fryer chicken quarters
• 3 qt. OPEN PIT Original Restaurant Recipe Barbecue Sauce

1. Divide chicken quarters evenly among 3 parchment paper-lined full sheet pans (or 1 half sheet pan for trial recipe).
2. Bake in 350F-convection oven for 40 to 45 minutes or until meatiest part of chicken registers at least 165F when tested with a meat thermometer.
3. Transfer chicken to 4 full (2-inch) hotel pans (or 1 half 2-inch hotel pan for trial recipe), dividing the chicken evenly among the pans.
4. Pour 1 qt.
5. of the barbecue sauce evenly over chicken in each pan (or all of the barbecue sauce over chicken in pan for trial recipe).
6. Bake an additional 5 minutes.
