Cinnamon Roll Protein Oatmeal

  1. For the oatmeal: In a small pot, combine oatmeal and sweetener.
  2. Add in water and vanilla extract.
  3. Bring to boil over medium/high heat.
  4. Once boiling, reduce heat to medium/low and simmer until oats are thick, stirring frequently, about 5 minutes.
  5. Take the oatmeal off the heat and let it cool for 5 minutes.
  6. For the cinnamon swirl: While oatmeal cools, stir together protein powder, cinnamon and coconut sugar in a small bowl.
  7. Add in the water, 1 teaspoon at a time, and stir to create a thick, but spreadable, paste, like what you would spread in a cinnamon bun.
  8. Set aside,
  9. For the cream cheese swirl: In a separate small bowl, stir together softened cream cheese and vanilla extract.
  10. Sweeten to taste.
  11. Add cinnamon mixture and cream cheese into oatmeal and swirl around.
  12. Devour.
  13. Note: Brown sugar can be used if you do not have coconut sugar.
