Cinnamon Roll Protein Oatmeal
- 1/2 cups Old-fashioned Rolled Oatmeal
- 2 Tablespoons Truvia (or Sweetener Of Choice) To Taste
- 1 cup Water
- 1/4 teaspoons Vanilla Extract
- 2 Tablespoons Vanilla Protein Powder
- 1 teaspoon Cinnamon
- 1 Tablespoon Coconut Sugar
- 4 teaspoons Water, Or More As Needed
- 1 Tablespoon Reduced-fat Cream Cheese, Softened
- 18 teaspoons Vanilla Extract
- Truvia (or Sweetener Of Choice) To Taste
- For the oatmeal: In a small pot, combine oatmeal and sweetener.
- Add in water and vanilla extract.
- Bring to boil over medium/high heat.
- Once boiling, reduce heat to medium/low and simmer until oats are thick, stirring frequently, about 5 minutes.
- Take the oatmeal off the heat and let it cool for 5 minutes.
- For the cinnamon swirl: While oatmeal cools, stir together protein powder, cinnamon and coconut sugar in a small bowl.
- Add in the water, 1 teaspoon at a time, and stir to create a thick, but spreadable, paste, like what you would spread in a cinnamon bun.
- Set aside,
- For the cream cheese swirl: In a separate small bowl, stir together softened cream cheese and vanilla extract.
- Sweeten to taste.
- Add cinnamon mixture and cream cheese into oatmeal and swirl around.
- Devour.
- Note: Brown sugar can be used if you do not have coconut sugar.
