Amber House Mushroom Crustless Quiche Recipe
- 1/2 lb mushrooms, sliced
- 1 bn green onions, minced
- 3 Tbsp. margarine
- 3 x Large eggs
- 1/2 c. plus 1 Tbsp. Bisquick
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp nutmeg
- 1 1/2 c. lowfat milk
- 1 1/2 c. Monterey Jack cheese, shredded
- Heat oven to 350 degrees.
- Butter a 9 inch cake pan and set aside.
- In a skillet, saute/fry mushrooms and onions in margarine.
- In a small bowl, beat Large eggs.
- Add in Bisquick to Large eggs and mix till smooth.
- Add in salt, pepper and nutmeg to egg mix and blend for 1 minute.
- Slowly add in lowfat milk to egg mix and mix thoroughly.
- Layer bottom of buttered cake pan with half of the mushrooms and onions.
- Add in cheese, then top with remaining mushrooms and onions.
- Pour egg mix over top.
- Bake for 50 to 55 min.
