Sour Cream Blueberry Coffee Cake Recipe
- 3/4 c. butter
- 1 c. sugar
- 2 well beaten Large eggs
- 1 c. dairy lowfat sour cream
- 2 1/2 c. flour
- 1 teaspoon salt
- 1 teaspoon soda
- 1 can blueberry pie filling
- 1/2 c. sugar mixed with 1/2 teaspoon cinnamon
- Pecans for garnish
- Cream butter and sugar.
- Combine Large eggs with lowfat sour cream.
- Add in to creamed mix.
- Stir in flour, salt, soda.
- Mix well.
- Spread half of batter in greased 9x13 pan.
- Spread pie filling over batter.
- Sprinkle 1/2 of sugar/cinnamon mix over pie filling.
- Top with remaining batter.
- Sprinkle with remaining sugar/cinnamon.
- Garnish with pecans.
- Bake at 350 degrees for 45-55 min.
