Chicken And Sausage Fille Gumbo Recipe

  1. Fry bacon, crumble and set aside.
  2. Heat bacon grease and add in flour to it a Tbsp.
  3. at a time to make the roux.
  4. Roux is done when it becomes dark brown and thick.
  5. Throw in minced onions and garlic.
  6. Cook 2 min.
  7. Add in 1 gallon water.
  8. Add in salt, pepper and garlic pwdr to taste.
  9. Lightly flour chicken pcs and brown or possibly partly fry in a little oil just to seal in juices.
  10. Throw into gumbo.
  11. Throw in bacon.
  12. Slice 2 pounds smoked sausage (total cooking time 1 1/2 hrs or possibly when chicken is tender).
  13. Skim off excess oil and throw away.
  14. Then stir in fille.
  15. Serve over steamed or possibly boiled rice.
